Yield: about 60 cookies
Filling: combine in a food processor or blender:
1 cup Aronia berries
1 cup pecans
1/4 cup packed brown sugar
Dough:
1 cup butter
1 1/2 cups granulated sugar
1/2 tsp baking powder
1/2 tsp salt
2 eggs
3 tsp grated orange peel
3 cups flour
Beat softened butter. Add sugar, baking powder and salt; beat until combined. Beat in eggs and orange peel. Beat in as much flour as you can with the mixer; mix in the remainder by hand. Divide dough in half & refrigerate for 1 hour. Roll each half into a 10 inch square. Spread with the filling & roll up. Chill for 4+ hours. Cut rolls into 1/4 inch slices. Bake at 375 degrees for 8-10 minutes; edges should be firm and bottoms lightly browned.
Aronia Smoothie "A delicious and healthy smoothie with Aronia berries"
Yield: 4 cups
Place in a blender:
1 banana
1 chopped apple
1 cup Aronia berries
1/2 cup vanilla yogurt
1 peach or 1 cup canned peaches
1/2 cup juice (apple, peach, orange, etc)
3/4 c water with ice cubes
Blend well. Enjoy the drink!!! If you are adventurous, try other fruit combinations. I experiment with other fruits and often add almonds, pecans, or walnuts. This drink is great for breakfast or as a dessert.
Aronia Apple Crunch "A tantalizing twist on a traditional recipe!!!"
Crust:
1 1/4 cup quick cooking oats
1 1/4 cup flour
1/2 cup brown sugar
1/2 tsp soda
1 tsp vanilla
3/4 cup margarine
3/4 cup coconut
1/2 c chopped walnuts
Mix well. Reserve 1 cup for top layer.
Pat remaining mixture in 9x13 inch pan.
Mix:
1/2 to 3/4 cup Aronia berries
1 cup applesauce OR 1 cup chopped apples & 1/2 cup brown sugar
Spread over the crust.
Top with reserved 1 cup crust mixture.
Bake at 350 degrees for 25-30 minutes. This is scrumptious served warm with whipped cream!!
Aronia Muffins "A basket of these muffins makes a wonderfully healthy hostess gift."
Yield 12 muffins
1/2 cup butter
1 cup sugar
2 eggs
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
2 cups flour
1/2 cup milk
2 cups fresh or frozen Aronia berries (when using frozen berries keep frozen to avoid purple batter)
Cream together butter & sugar until light & fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Sift together dry ingredients & gradually add alternately with milk. Fold in Aronia berries.
Grease a muffin pan or use muffin papers. Pile batter high in each muffin cup.
Bake at 375 degrees for 30 minutes.
Aronia Berry French Toast "This Aronia bake is a favorite for Sunday brunch!"
10 slices of bread spread with 4 oz of softened cream cheese
1 1/2 cups Aronia berries
6 eggs, beaten
1 1/4 cups milk
1/4 cup maple syrup
1/4 tsp nutmeg
1/4 cup butter, cubed
Preheat oven to 350 degrees. Coat a 9x9x2 baking dish with butter or non-stick spray. Cut the slices of bread spread with cream cheese into cubes. Place half of the cubes into the dish. Sprinkle 3/4 cup of Aronia over the bread. Top with remaining bread cubes & Aronia.
In a bowl combine eggs, milk, maple syrup, and nutmeg. Pour over bread mixture. Sprinkle small cubes of butter over the top.
Bake at 350 until a knife inserted in center comes out clean, about 1 hour, covering with foil if edges brown too quickly.
